Practical Tips for Vegetarian Travelers in Kumamoto and Aso
- Always ask about dashi — this is the #1 hidden ingredient. Even dishes that look completely vegetarian (miso soup, simmered vegetables, noodle broth) almost always contain fish-based stock unless the restaurant specifically states otherwise.
- Learn these two phrases — they solve most situations:
「肉なしでお願いします」 — “Niku nashi de onegai shimasu” (Without meat, please)
「魚もなしで」 — “Sakana mo nashi de” (No fish either)
- Show a written card. Printing or saving this sentence on your phone to show restaurant staff is more effective than speaking: 「私はベジタリアンです。肉・魚・卵・乳製品は食べられません。かつお出汁も使わないでください。」 (I am vegetarian. - Communicate ahead at Aso restaurants. In the Aso countryside, restaurants are smaller, menus are less flexible, English is rarely spoken, and opening schedules can be irregular.
